Avocado Cubes with Caviar
There are many ways to enjoy caviar! In a classic serving, crème fraîche or soft, unsalted butter is often used as a creamy base to complement the juicy caviar eggs. Alternatively, avocado makes for a perfect, healthier substitute with its rich, creamy texture. With that in mind, we decided to create a simple yet visually stunning appetizer featuring avocado and caviar.
What you need:
- Two perfectly ripe avocados
- The juice of one lime
- One tablespoon of powdered gelatin
- Pinch of salt
- 2 ounces of Caviar
Preparation Instructions:
Step One
Cut the avocado in half, remove the pit, scoop out the pulp, and place it in a blender. Squeeze the juice of a lime and add it to the avocado along with a pinch of salt.
Step Two
Add a tablespoon of powdered gelatin to a glass or bowl. Pour 100g (3-4 oz) of hot water over the gelatin, stirring until it dissolves completely. Add the gelatin mixture to the avocado blend and blend until smooth and creamy.
Step Three
Pour the avocado mixture into a square dish, ensuring it’s no more than 1 inch thick. Refrigerate for about 5-6 hours, or ideally overnight.
Step Four
To remove the set mixture, turn the dish upside down on a plate and allow time for it to release. Alternatively, you can briefly dip the dish in warm water to slightly melt the bottom of the jelly, making it easier to remove. Once released, cut the jelly into 1-inch cubes. Arrange the cubes on a serving plate and top each with a small amount of caviar.
