Avocado Cubes with Caviar

There are many ways to eat caviar! In a classic serving, we usually use crème fraîche or soft unsalted butter as a creamy base for these juicy caviar eggs. On the other hand, avocado is a perfect, healthier substitution with its creamy consistency. So, we decided to make a simple but spectacular-looking appetizer with avocado and caviar.

What you need:

  • Two perfectly ripe avocados
  • The juice of one lime
  • One tablespoon of powdered gelatin
  • Pinch of salt
  • 2 ounces of Sturgeon Caviar

Prepare Instructions:

Step One

Cut the avocado in half, remove the pit, spoon out all the pulp, and put it in the blender. Squeeze the juice from a lime, add it to the avocados with a bit of salt.

Step Two

Put a tablespoon of powdered gelatin into a glass or bowl, pour 100g/3-4oz of hot water into the gelatin. Stir until the gelatin dissolves. Add it to the other ingredients and blend it to a completely creamy consistency.

Step Three

Put the avocado mixture into a square dish. Make it no more than 1 inch thick. Refrigerate for about 5-6 hours, overnight is better.

Step Four

Put the dish upside down on a plate and give it time to crawl out. Alternatively, you can put the dish down in warm water to melt the bottom of the jelly a little bit, so you can extract it much faster. After that, cut it into inch by inch cubes. Put it on the serving plate and finally add some caviar on top of each cube.
